Sunsweet® Spiced Prune Cake

Ingredients
1/4 cup water
2 cups Sunsweet Pitted Prunes
2 cups sugar
2 Tbsps butter or shortening
1 cup Sunsweet Prune Juice
3 eggs
1 Tbsp each, ground cloves, cinnamon and nutmeg
2 1/2 cups plain flour
1 Tbsp baking soda

Directions
Place Sunsweet prunes in microwave safe dish and add water. Microwave for 2 minutes. Mash prunes. Cream the butter, sugar and eggs and beat well. Add spices. Add baking soda to the prune juice and mix into the above mix, alternating with flour. Add prunes last. Bake in 13x9 baking pan at 350° for about 30-35 min or until knife comes out clean. Dust with powdered sugar, or choice of icing. MAKES 24 SERVINGS
