Prune-Glazed Pork Cutlets

Ingredients Sauce
3 cups water
1 1/2 cups firmly packed brown sugar
3/4 cup white vinegar
1 Tbsp ground ginger
3 cups Sunsweet® Pitted Prunes
Salt and freshly ground black pepper
24 pork cutlets, about 3/4-inch thick, trimmed
Vegetable oil

Directions
In a large saucepan combine the water, brown sugar, vinegar, and ginger. Add the prunes, bring to a simmer, and cook until the prunes are tender and the mixture has thickened to a sauce-like consistency, 8 to 10 minutes. Keep in a warm spot or reheat as needed. Working in batches as needed, heat a skillet until hot and brush with oil. Brown the pork chops on both sides, cooking until desired doneness, 3 to 5 minutes per side. Spoon the sauce over the chops and serve. MAKES 24 SERVINGS
