Smoked Turkey Waldorf Salad

Ingredients
2/3 cup lemon juice
4 cups light mayonnaise
Salt and freshly ground black pepper (about 2 tsps of each)
32oz (about 8 cups) diced smoked turkey
8 cups diced celery
4 cups green onions, chopped
4 cups Sunsweet® Pitted Prunes
4 cups almonds, chopped

Directions
Whisk the lemon juice into the mayonnaise as needed to a light coating consistency. Season to taste with salt and pepper. Refrigerate until ready to use. In a large bowl or hotel pan combine the remaining ingredients (or in batches as needed). Just before serving, whisk the mayonnaise mixture again, drizzle over the salad ingredients, and toss to combine. MAKES 24 SERVINGS
